Overnight Steel Cut Oats - Easy Breakfast On The Go

We all want something delicious and nutritious for breakfast, but who wants to spend a lot of time making breakfast when we're always on the go?  Whether you have a 9-5 job or not, this recipe is perfect for those who want something easy, nutritious, and delicious. You can eat this at home, take it with you to work, or when you're out for the day for a hike in the mountains. You can also pre-make these if you don't want to do the preparation in the morning. 

In this recipe, I used steel cut oats as the base. Steel cut oats are minimally processed and is considered a "power food" because they are high in protein and fiber. Steel cut oats are dense and oh I just love its chewiness! 

I used to avoid making steel cut oats because of how long it takes to cook it. And by long, I mean around 25 minutes! When you're always in a rush, a 25-minute wait can feel like forever!

Here's an easy way to cook steel cut oats:

Make this the night before. 

  • Boil 4 cups of water
  • Once it starts to boil, add 1 cup of steel cut oats. 
  • Add a pinch of salt.
  • Stir and leave it for 1 minute.
  • Turn off the stove, cover the pot and set aside. No need to put it in the fridge.

Your oats will be ready in the morning. 

Ingredients

  • Buckwheat Honey (any honey will do) 
  • 1 cup steel cut oats
  • Fruits of your choice (berries is always good)
  • Plain Yogurt
  • Chia Seeds
  • Cinnamon powder
  • Sesame seeds (optional)

 

You can add as much chia seeds as you want. I like mine in a gelatinous form, so I would soak the chia seeds in cold water for about 15 minutes. Just add a few spoonfuls of chia seeds in a cup or glass and add just enough water that it covers all the seeds. Stir and let it chill for 15 or so minutes. Tip: You can also make this the night before. 

Prepare (per cup or per person) - In a cup, mason jar or drinking glass - Add a few tbsp of steel cut oats, top with 1-2 tbsp of honey, add a few spoonfuls of yogurt, add the chia seeds and top it with your favorite fruits! Add sesame seeds and/or cinnamon powder to finish it off if and voila!
